Rosemary leaves are a herb that is incredibly versatile, deeply aromatic and wonderfully flavoursome. Originating in the Mediterranean, this evergreen shrub can reach heights of up to one metre and can live up to many decades. Rosemary leaves have a striking, potent aroma that when crushed between the fingers and taken in deeply becomes apparent. This aroma is released from the needle-like leaves which can be used both fresh and dried in cooking to season and flavour both savoury and sweet dishes. Rosemary is a member of the mint family, Lamiaceae, and although a perennial plant it is an ideal herb to cultivate in the garden due to its hardy character and drought resistance. The bright, shining leaves have a bewitching scent with hints of menthol, lemon, pine and camphor and adds flavour to lamb, beef, chicken, pork, seafood and vegetables. Rosemary leaves have long been used as an ingredient in Mediterranean cooking, but in recent years have been becoming increasingly popular in other cuisines. Besides the palatable flavours to be enjoyed when using rosemary, it is also incredibly nutritious. Rich in iron, calcium, vitamin B6 and manganese, it is also a reliable source of vitamin A. As if that wasn’t enough, the leaves also contain compounds and antioxidants that are known to have healthful benefits. Rosemary leaves have a calming property as well as energizing qualities. For centuries, it has been known to boost brain function, improve memory, and help improve concentration. Studies have also shown that the leaves can reduce the stress hormone ‘cortisol’, which can result in improved mood and lower blood pressure. Rosemary can also be used for therapeutic purposes due to its aromatic oils and its anti-inflammatory and antioxidant properties. Rosemary oil has been used to treat indigestion, headaches, respiratory problems and even muscle pain in aromatherapy. It is thought to have antiseptic and antifungal properties as well as being used to ward off insects and other pests. Rosemary leaves also have beauty benefits, from being used in shampoos, conditioners and perfumes to added to bathwater to bestow soft, smooth skin. The essential oils added to homemade lotions and potions can also help dull, toneless skin, and the leaves can even be used to make natural dyes for the hair.
